Double Dippin' the Fermented Hummus

Try this enhanced hummus dip to boost nutrition, increase digestability and feel fuller longer. The flavor is very similar to our familiar snack, but the tempeh adds a richness and depth unlike normal hummus.
What you will need:
1 10 oz cake chickpea tempeh
1 C water or stock
1/4-1/2 C Tahini
juice of 1.5-2 lemons
1 T lemon zest
3 garlic cloves
1/2 T sumac
salt to taste
olive oil to garnish before serving
First, you will want to cut CG chickpea tempeh into cubes or small pieces. Poach the tempeh in a fry pan in 1 cup of liquid for 10 minutes with a lid. Remove from heat and place the tempeh into another container. ***Save the liquid that remains and set aside.
Next, you will add the tempeh to a food processor along with tahini, lemon juice, garlic, sumac, tempeh liquid, salt and lemon zest. Blend until desired smoothness. I like mine extra smooth so I needed to add more water. I chose not to add olive oil because I was seeking a specific texture.
Garnish with more zest, olive oil, salt and sumac. This is so rich and wonderful and I cannot wait to make this for family and friends!!
