I was exhausted and desperate for a meal so I made this with half a brain. It was absolutely delicious. Lucky it was the creative side of my brain that was working...As usual I used what I had on hand to make an eclectic version of the original. I've seen many takes on the classic dish ranging from tortillas/tortas to chips and/or served over grits. Guacamole vs. plain avocado.....beans or no beans, runny egg vs. fully cooked...salsa or pico de gallo or ranchero sauce. The list goes on. I wanted something similar and this is what I came up with!
Blue Corn chips, topped with our black bean pepitas tempeh-minced and sauteed in oil then to be stewed in verde sauce. Fresh Avocado and pineapple tomato salsa, with onion shoots, lemon balm and lemon juice....had to use what was on hand;) Oh and cant forget the fried egg with chili powder and whole milk yogurt. Flavor explosion. Best part about this meal is how it restored the other half of my brain.
